Potage Saint-Germain

As the days start getting cooler, we'll all start looking for something that warms us up. Therefore, I'm sharing this quick and easy peas soup, which I can guarantee will become one of your favourite dishes throughout these colder months. There are only a few simple ingredients; peas, vegetable stock, shallot or red onion and condiments such as croutons, bacon and crème fraiche to top up this beautiful soup.

Salut mes amis! Welcome back to another delicious recipe on The Languages Kitchen. I'm excited today to share this recipe with you. The past couple of weeks have been quite busy for me so I wanted to share a recipe I've been reaching for more often lately. Also, because now it's starting to get colder and rainier in the UK, so I wanted something to warm me up.

With this recipe, I'm sharing the second lesson on the ordinal numbers, which you'll be able to find by clicking the link at the bottom. This lesson will help you revise the previous numbers already mentioned in lesson 1 and introduce the rest of these numbers. Therefore, let's not waste any more precious time and start preparing this scrumptious soup.

Ingrédients

  • 20gr de beurre
  • 1 échalote/oignon rouge
  • 1/2 l. bouillon de légumes
  • 200gr de pois écossés
  • pincée de sucre
  • sel
  • poivre

Pour servir

  • 2 c.à.s de crème fraiche
  • croûtons
  • bacon

Ingredients

  • 20gr butter
  • 1 shallot/red onion
  • 1/2 litre vegetable stock
  • 200gr shelled peas
  • pinch of sugar
  • salt
  • pepper

To serve

  • 2 tbsp crème fraiche
  • croutons
  • pancetta

Méthode / Method

Dans une casserole, faites fondre le beurre à feu moyen. Ajoutez l'oignon rouge et faites frire pour 2 à 3 minutes. 


In a saucepan, melt the butter over medium heat. Add the red onion and fry for 2 - 3 minutes.

Ajoutez les pois, le bouillon de légumes, le sucre, le sel et le poivre. Laissez mijoter pendant environ 15 à 20 minutes.


Add the peas, stock, sugar, salt and pepper. Simmer for about 15-20 minutes.

Égouttez les pois et gardez le liquide de cuisson. Avec un robot culinaire, traitez les pois à une purée et retournez à la casserole. Ajoutez le liquide de cuisson graduellement jusqu'à ce que vous ayez la consistance souhaitée.


Strain the peas and keep the cooking liquid. With a food processor, process the peas to a purée and return to the pan. Gradually, add the cooking liquid until you have the desired consistency.

Réchauffez la soupe. Mettez la soupe dans une assiette à soupe et complétez avec de la crème fraiche, des croûtons et du bacon frit.


Reheat the soup. Plate and top with some crème fraiche, croutons and some fried bacon.

I hope you enjoyed preparing this lovely soup. I like it so much because it's ideal for those busy days as it takes no time to prepare but it still tastes amazingly good.
