Farfalle al salmone affumicato

Farfalle al salmone affumicato - a quick and easy pasta dish with a smoked salmon sauce. Pasta was first mentioned around the year 1100 in Sicily. This pasta dish could be done from the leftovers from the fish dishes prepared for Christmas Eve.

Pasta has to be one of the staple dishes in every Italian home and this tradition has expanded to almost every home on the planet. Since this year we've talked about in a blog of a particular tradition from the south of Italy for Christmas Eve's dinner - la festa dei sette pesci, I decided to use some of the leftovers and do a delicious pasta dish with some smoked salmon.

Ingredienti

  • 170gr di farfalle 
  • 2 scalogni  
  • 25gr di salmone affumicato
  • 1/2 bicchiere di vino bianco  
  • 100ml di panna da cucina
  • 25ml di latte  
  • 1 cucchiaio di prezzemolo tritato  
  • pepe
  • sale

Ingredients

  • 170gr pasta 
  • 2 shallots
  • 25gr smoked salmon
  • 1/2 glass of white wine
  • 100ml cream
  • 25ml milk
  • 1 tbsp chopped parsley
  • pepper
  • salt

Metodo / Method

In un goccio d'olio, fate rosolare gli scalogni finemente tritati. Lasciateli imbiondire. Tagliate le fette di salmone affumicato in pezzetti abbastanza grandi. 


In a drop of oil, brown the finely chopped shallots. Cut the slices of smoked salmon into large pieces.

Unite il salmone nella padella con l'olio e gli scalogni e fatelo rosolare per un paio di minuti. Sfumate con il vino bianco e lasciate evaporare a fiamma bassa.


Add the salmon to the pan with the oil and the shallots and sauté for a couple of minutes. Add the white wine and let it evaporate over low heat.

Aggiungete la panna, il latte e lasciate cuocere per altri 2 minuti, aggiungendo alla fine anche un pizzico di sale e del pepe e il prezzemolo.


Add the cream, the milk and cook for another 2 minutes, adding at the end a pinch of salt and pepper and the parsley.

Lessate le farfalle in acqua bollente e salata. Scolate le farfalle al dente ed unitele nella padella con il condimento al salmone affumicato. Fate mantecare il tutto per un paio di minuti. Servite immediatamente.


Boil the pasta in salted water. Drain when al dente and add them to the pan with the smoked salmon sauce. Let it cook for a couple of minutes. Serve immediately.
