Minestra di Primavera - a soup of Italian origin made with vegetables, sometimes with the addition of pasta or rice. Common ingredients are zucchini, spring onions, asparagus or whatever kind of vegetables are in season. For this recipe, we're doing a Spring soup.

- 2 zucchine
- 200gr di cipollotti freschi
- 100 gr di piselli
- 150gr di asparagi verdi
- 1 spicchio d'aglio
- 2 uova fresche
- 1 litro di brodo vegetale bollente
- olio d’oliva
- pepe
- sale

- 100gr peas
- 150gr green asparagus
- 1 clove of garlic
- 2 fresh eggs
- 1 litre of boiling vegetable stock
- olive oil
- pepper
- salt
Metodo / Method
Lavate tutte le verdure. Affettate i cipollotti e gli asparagi a listarelle, e tagliate a dadini le zucchine. Scaldate in una pentola 2 cucchiai d’olio, versate le verdure assieme allo spicchio d’aglio in camicia e rosolate. Salate e pepate. Togliete l’aglio dalla pentola e versate il brodo vegetale bollente. Cuocete la minestra a fuoco medio per circa mezzora.
Wash all vegetables. Slice the spring onions and asparagus and dice the zucchini. Heat 2 tablespoons of oil in a pot, pour the vegetables together with the clove of garlic in a shirt and brown. Salt and pepper. Remove the garlic from the pot and pour the boiling vegetable stock. Cook the soup over medium heat for about half an hour.
Quando la minestra è quasi pronta, preparate le uova. In una pentola, scaldate dell’acqua. Sgusciate le uova e cuocete per circa 3–4 minuti. Raccogliete le uova con un mestolo forato. Servite la minestra primaverile con un uovo su ogni porzione. Pepate e salate l'ouvo e servite.
When the soup is almost ready, prepare the eggs. In a saucepan, heat some water. Shell the eggs and cook for about 3-4 minutes. Collect the eggs with a slotted spoon. Serve the Spring soup with an egg on each serving. Season the eggs with salt and pepper and serve.
