Petto d'anatra all'arancia - the duck breast with orange sauce originates from Florence. It was then introduced to France when Caterina de Medici married Henry II. This dish is very popular for the Christmas festivities, however, it's also very popular during the winter months.
Welcome to the month of December and as I promised I will be posting recipes for this festive time of the year. I'm starting with a main dish that you could cook for Christmas day if you're not as into the traditional turkey dish. Today, we're making petto d'anatra all'arancia.

- due petti di anatra con la pelle
- spicchi di aglio
- 100ml di vino rosso
- marmellata di arance
- sale
- pepe
- una noce di burro
- 1 arancia
- succo di mezzo limone
- 1 cucchiaio di farina

- orange marmalade

- a knob of butter
- 1 orange
- juice of half a lemon
- 1 tbsp of flour
Metodo / Method
Mettete i petti di anatra in una padella bollente, prima dalla parte della pelle, in modo che questa possa rilasciare il grasso, e poi girandoli. Quando la carne è leggermente cotta toglietela dal fuoco.
Place the duck breasts in a hot frying pan first on the skin side so it releases the fat, and then turn it around. When the meat is slightly cooked place it on a plate to rest.
Aggiungete una noce di burro nella stessa padella della carne e mettete l’aglio, lasciate che aromatizzi il burro, toglietelo e unite alla marmellata, il succo dell’arancia e del limone. Versate il vino, aggiungete la farina e portate ad ebollizione.
Add a knob of butter to the same frying pan and put the garlic, let it flavour the butter, remove it and add it to the jam, orange juice and lemon juice. Pour the wine, add the flour and bring to a boil.
Infornate la carne in una teglia a 180°C per 25-30 minuti. Mettete una parte della salsa sulla carne durante la cottura. Una volta cotta la carne, servite con il resto della salsa.

I've completed this dish with some mashed potatoes and a side of broccoli seasoned with salt pepper, chilli flakes and a drizzle of olive oil. Enjoy preparing this dish for your next dinner during this festive December month.
