Ribollita - a Tuscan soup, with the literal name meaning ‘reboiled’. There are many variations but the main ingredients always include bread (which I won’t be adding), cannellini beans and inexpensive vegetables such as carrots, celery and onion. Like most of the Tuscan cuisine, the soup has peasant origins. It was originally made by reheating vegetable soup from the previous day.

Ci sono molte varianti, ma gli ingredienti principali sono sempre pane (non aggiungerò alla mia ricetta) fagioli cannellini e verdure poco costose come carote, sedano e cipolla. Come la maggior parte della cucina Toscana, la zuppa ha origini contadine. È stata originariamente fatta da riscaldare zuppa di verdure del giorno precedente.

Ingredienti
- 300gr fagioli cannellini
- 1 cucchiaio olio d’oliva
- 25gr pancetta
- 1 gambo di sedano
- 3 carote
- 1 cipolla
- spicchio d’aglio
- del timo
- 375ml brodo di pollo
- sale
- pepe
- 10gr Parmigiano
Ingredients
- 300gr cannellini beans
- 1 tbsp olive oil
- 25gr pancetta
- 1 celery stick
- 3 carrot
- 1 onion
- garlic clove
- thyme
- 375ml chicken stock
- salt
- pepper
- 10gr Parmesan
Metodo / Method
In una casseruola, cuocete la pancetta fino a renderla croccante. Aggiungete il sedano tritato, le carote e la cipolla, poi l'aglio e il timo.
In a saucepan, cook the pancetta until crispy. Add the chopped celery, carrot and onion, then the garlic and thyme.
Versate il brodo di pollo e aggiungete i fagioli cannellini sciacquati. Fate bollire la zuppa coperta per circa 30 minuti.
Pour in the chicken stock and add the rinsed cannellini beans. Simmer the soup covered for about 30 minutes.
Togliete il coperchio e cuocete a fuoco lento per altri 5 minuti. Aggiungete del parmigiano e servite.
Remove the lid and simmer for another 5 minutes. Sprinke some Parmesan cheese and serve.
