Pollo alla cacciatora - the literal meaning of cacciatore is 'hunter', which means that the dish is prepared 'hunter-style'. This kind of cooking is very popular with chicken and rabbit.
The chicken is first seared, then a few simple ingredients such as onion, garlic, celery and carrots are added and fried for a little while before red wine and tomatoes are added and left cooking for at least 30 minutes. - 700gr di pollo
- 1 cipolla
- 200gr pomodori pelati
- 1 carota
- 1 sedano
- 1 spicchio d’aglio
- 50ml vino rosso
- un ramo di rosmarino
- del prezzemolo
- dell’olio
- pepe
- sale

- 200gr peeled tomatoes
- 1 carrot
- 1 celery
- 1 clove of garlic
- 50ml red wine
- rosemary branch
- parsley
- oil
- pepper
- salt
Metodo / Method
Scaldate dell'olio in una casseruola e rosolate il pollo girando dopo un pò.
Heat the oil in a saucepan and sauté the chicken, turning it after a while.
Aggiungete il sedano, carota e cipolla e poi lo spicchio d’aglio. Salate, pepate e aggiungete il ramo di rosmarino. Lasciate insaporire per circa 5 minuti.
Add the celery, carrot and onion and then the garlic clove. Add salt and pepper and add the rosemary branch. Leave to flavour for about 5 minutes.
Sfumate con il vino rosso. Togliete il rosmarino e lo spicchio d’aglio e aggiungete i pomodori pelati.
Fade with red wine. Remove the rosemary and the garlic clove and add the peeled tomatoes.
Mescolate il tutto e coprite. Cuocete a fuoco moderato per 30-35 minuti. In fine, Aggiustate di sale se serve e mettete del prezzemolo. Servite immediatamente.
Mix everything and cover. Cook over medium heat for 30-35 minutes. Finally, season with salt if necessary and add parsley. Serve immediately.
