Zuppa di lenticchie - a traditional dish in the Italian cuisine. It’s a starter simple enough to prepare and contains a variety of vegetables delicious. This soup is one of my go to recipes when the weather starts to get a bit chillier and I want something to warm me up on a cosy night in.

- 80gr di lenticchie
- cipolla
- spicchio d’aglio
- 2 carote
- 1 sedano
- 1 patata
- 1 litro d’aqua
- 1/2 cucchiaio cumino
- olio d’oliva
- sale
- pepe

- onion
- garlic clove
- 2 carrots
- 1 celery stick
- 1 potato
- 1 litre of water
- 1/2 tbsp cumin
- olive oil
- salt
- pepper
Metodo / Method
Mettete in ammollo le lenticchie in acqua fredda per almeno 12 ore. Tagliate a dadini le carote, sedano e patata. Tritate finemente la cipolla e l’aglio e friggete in dell’olio.
Soak the lentils in cold water for at least 12 hours. Cut into cubes the carrots, celery and potato. Finely cut the onion and garlic and fry in some oil.
Aggiungete le verdure tranne le lenticchie. Fate rosolare per circa 10 minuti e poi aggiungete le lenticchie. Aggiungete il cumino, salate e pepate e aggiungete l’acqua calda. Lasciate cucinare per circa un’ora.
Add the vegetables excluding the lentils. Let them cook for about 10 minutes and then add the lentils. Add the cumin, season with salt and pepper and add the hot water. Let it cook for about an hour.
